Welcome to Eat Healthy! This is a blog about interesting, exciting, delicious food that happens to be nutritious and affordable. Every recipe I share is easy to make and designed to help make healthy eating an everyday pleasure. I’m Gin. I eat healthy because it helps me feel good mentally and physically, and I love creating and sharing nutritious, cost-effective recipes that strike me as truly delicious. I think the only thing that rivals my food joy is photography joy, so naturally I take lots of pictures of what I cook. I count a strikingly pie-shaped piece of rock among my favorite childhood toys, and my first creation was a sundae topped with grape jelly, crushed potato chips and miniature marshmallows made especially for my dad, who was cool enough to eat it. I learned to cook from my mom, hundreds of cookbooks, tons of trial and error and eating. I love trying new things and figuring out how to make tastes I like happen in my own cooking. I was born in Brooklyn before it was hip, and lived in Pittsburgh, Phoenix, and Seattle before setting up camp in rural PA with my awesome mom and several cats with lots of personality. I have a boyfriend so cool we do yoga together, and we also thrift, watch cartoons and take lots and lots of pictures.
