I am thrilled to have you here and look forward to having you back again. My Weight Loss Story Like many people, I have spent much of my adult life struggling to keep my weight under control. I spent a long time wishing I could find a way to make weight loss a reality for me. Eating healthy and losing weight requires a real plan and real effort. When you add a couple kids, husband, a full-time job and all of life’s other responsibilities, losing weight and eating healthy can seem down right impossible. In October of 2010, my weight peaked at 180 pounds. I’m 5’3” and that only made the extra weight show that much more. It was then that I realized that I was a fat mom and I couldn’t stand the thought of being this way for another day. I wanted to be a skinny mom. More importantly, I wanted to be a healthy mom. Becoming skinny would be an added bonus of being responsible with my own and my family’s diet. As I researched plans to tackle my goal, I found many weight loss plans to be “gimmicky” or very drastic. I knew that a “shock treatment” or “boot camp” approach to eating healthy was not a realistic way for me to make a permanent change. It was around this time I was introduced to the website My Fitness Pal. This was when the light bulb went off and my moment of change occurred. My Fitness Pal is a free, online calorie counter, diet and exercise journal. Using this simple tool, I started making small changes to reduce my daily calories. I started to prepare delicious meals using more nutritious and wholesome (meaning less processed) ingredients. I began to lose 2-3 pounds a week using this simple formula. I then added exercise to my daily routine when I could. All my changes were realistic and did not interfere with my very busy schedule. However, they were enough to turn my life in the direction of healthy eating and personal fitness. I was ecstatic! I couldn’t believe that I was finally making friends with weight loss and healthy eating. As of today, I have lost 31 lbs. My goal weight is 125lbs so I have 24lbs left to go. By taking small steps and changing gradually, I am much more confident now that I can reach my goal weight and maintain it than I would have using a “crash” diet plan. I know I can do it, and as the saying goes, “If I can do it so can you!” You can read more about my weight loss journey here. About Me and The Food I am just your average working mom who now makes it a priority to provide nutritious meals for my family that are kid-friendly and can realistically fit into my budget and busy life. I am not a professional chef nor do I have any culinary training. Though I am slightly addicted to watching the food network. My formal education does not include nutrition, dietetics, or any other type of health degree. Everything I know about food and nutrition has been learned through lots of reading and research as well as through much trial and error. Of course and lots of taste testing because mommy has to eat! The recipes you will find here are Skinny Mom’s Kitchen originals or adapted from my favorite cookbooks, cooking shows, magazines, blogs, and celebrity chefs. I try to put a healthy twist on dishes that challenge my skinny jeans! Lastly, every recipe I search out and make, I do so with the busy budget-conscious mom and picky kid in mind.
